Italian Meatloaf and Zucchini "hash"



Ingredients for Meatloaf:
1.2 pounds of ground chuck
1 cup shredded mozzarella
1 egg
1/2 cup breadcrumbs
1/2 cup grated parmesan cheese
1 cup chopped shiitake mushrooms
2 tsp minced garlic
1 small onion, diced small (about 1 cup)
1/4 cup fresh basil, chopped fine (or 2 TBSP dried basil)
1/2 jar of roasted red peppers, diced small
1 TBSP jarred hot and sweet peppers, diced small (I used Trader Joes brand but if you don't have jarred, you could use 1 jalapeno (fresh or pickled) finely chopped)
1/2 cup ketchup
8 dashes of Worcestershire sauce
10 dashes of hot pepper sauce (like Tabasco)
 2 tsp Garlic powder
2 tsp Salt
2 tsp Pepper
2 tsp Joes Stuff Seasoning (or any general seasoning mix blend.  If not just use more garlic, salt, pepper and maybe add a little paprika).
1 TBSP olive oil

Meatloaf "sauce":
3 TBSP ketchup
8-10 dashes of worsteshire
4-6 dashes of hot sauce
salt
pepper
1 TBSP very finely chopped roasted red pepper from the same jar as above

Directions:
1. Add olive oil to pan and saute onions, garlic and mushrooms with salt and pepper for about 6-8 minutes or until softened.  Let cool.
2. Preheat oven to 350 degrees. Spray 4 large ramekin dishes with cooking spray and set on a sheet pan. If you don't have smaller dishes to make 4 meatloaves, just add an extra 15 minutes of cooking time.
3. Combine all of the ingredients for the meatloaf in a large bowl except the meat.  Toss gently to mix well and then add the meat and toss with your hands like claws
4. Divide the meat mixture into 4 ramekins and press down lightly.  Bake in the oven for 45 minutes.
5. While the meatloaf is cooking mix ingredients for your sauce and chop all the ingredients for your side dish.
6. Remove from the oven and top with the meatloaf "sauce".  Up the oven 400 degrees and continue cooking for 15 more minutes. Remove and let cool before serving. The side dish takes 15 minutes to cook so while the meatloaf is resting and cooling down, I whip up the side dish.


Ingredients for Zucchini "Hash"
4 medium sized zucchini, cut into quarters and then chopped into 1/2 inch pieces
1/2 cup of chopped sun dried tomatoes
1 clove of garlic, minced
1 TBSP chopped shallot (or 1 small shallot)
4 slices of bacon (or about 1/4 of a pound)
1/2 cup crispy fried onions (like the ones for the green bean casserole)
1/2 cup grated parmesan
1 TBSP olive oil
salt and pepper to taste

Directions:
1. Chop the bacon and render in a large saute pan or braiser.  Remove the bacon with a slotted spoon and leave the fat in the pan.
2. Add your shallot and garlic to the pan with olive oil and bacon fat. Salt and pepper.  Saute 2-3 minutes.
4. Add zucchini and more pepper and saute 6-7 minutes, tossing occasionally.
5. Add sun dried tomatoes and cook for 5 more minutes.
6. Turn off the heat, add bacon back into the pan along with parmesan cheese. Toss to combine
7. Taste for seasoning here and add more if needed.
8. Serve a pile of "hash" and top with crispy onions!
