Homemade whole wheat pizza
Ingredients for dough:
1 tsp molasses
1 TBSP olive oil
1 1/2 cups of warm water
3 tsp active dry yeast
1 tsp salt
3 1/2 cups of whole wheat flour
Cornmeal for dusting
Toppings:
15 oz jar of pizza sauce
Shredded Mozzarella
Shredded Italian Cheese Blend
Pepperoncini peppers, sliced
1 large shiitake or a few cremini mushrooms, sliced thin
1 package of Premio Italian Chicken sausage, removed from the casing and broken up. Cook in a pan
Italian seasoning
red pepper flakes
Olive oil
Basil and parsley shreds for garnish
1. Stir the molasses in warm water. Sprinkle the dry yeast on top and let sit for 10 minutes.
2. Stir in the salt and then mix in the olive oil and dough (you can use a dough hook on a mixer). Just mix until its combined and forms a ball.
3. Take out of the mixer and knead on a floured surface for about 5 minutes.
4. Set in a large bowl sprayed with olive oil. Cover with a kitchen towel and let sit for 1 hour in a warm place.
5. Punch dough and separate into 2. sprinkle cornmeal on 2 sheets trays. Spread each dough ball out on the sheet tray to cover as much of sheet tray as you can without ripping it.
6. Cover with plastic wrap and let sit again for 30 minutes. The dough should puff up and grow a bit more.
7. Brush the dough conservatively with olive oil
8. Put into a preheated 400 degree oven for 15 minutes.
9. Remove dough and top it. Seasoning, sauce, cheese, pepperoncini, mushrooms, chicken sausage, sprinkle a bit more cheese.
10. Put back in the oven under a hot broiler for 5 minutes or until crisp and bubbly.
Put onto a wood cutting board and cut and serve.
Enjoy with a California Barbera to bring out the spiciness of the sausage and peppers.
