Winter Sausage and Vegetable One Pan Plan

















Ingredients:
30 Brussels sprouts, halved
1 head of cauliflower, chopped to 1 inch florets
1 onion, quartered
2 sweet potatoes, diced into 1 inch cubes
3 sprigs of rosemary, diced
4-5 sprigs of thyme, diced
6 sage leaves
Ground coriander
Ground cumin
Salt
Pepper
All spice
Sweet Hungarian Paprika
Canola oil
4 links of Aidells Cajun style andouille, each link slices into 4 pieces.
1 smoked Polska sausage, cut into 8-10 pieces.
4 TBSP butter

Mix together brussels sprouts and cauliflower in one tray and another tray with sweet potatoes and onions. (Ok it's 2 pans, sorry) Toss with seasoning, herbs and canola oil and spread in a single layer. Cook in 350 degree oven for 20 minutes.

Toss all ingredients. Move sweet potato and onion to center of tray and add sausage to that tray. Add a little more oil if your trays seem dry and sprinkle sausage with cumin and paprika.

Crank up the heat to 400 and cook another 10-15 minutes or until brussel sprouts look nice and brown and crispy and the sausage has some color on it.

Toss with butter and serve.
