Smashed Red Potatoes
Ingredients:
6 red potatoes cut into halves
Boil and salt water. Cook the potatoes in the water for about 5-10 minutes or until a fork just punctures through, don't cook them all the way.
Drain
Drizzle olive oil on sheet pan
Preheat oven to 425
Toss the potatoes out on the sheet pan. Spread them out and smash them using a can or jar. Be careful not to completely break them apart or have them stick to you jar. Season potatoes generously with salt, thyme, chili powder and garlic. Drizzle top with olive oil. Cook for 25-30 minutes or until crisp.
I served this with a simple chicken and pan sauce. Here is the recipe.
Chicken thighs with salt and pepper.
2 tbsp butter
Sear 5 minutes in each side
Remove from pan and deglaze with 2 tbsp of brandy.
Add some chopped garlic, 1 diced shallot, lemon pepper seasoning and 2 tbsp butter. Saute for 5 minutes.
Add 2 packages of cremini mushrooms, 2 tbsp parsley, red pepper flakes, salt and pepper. Sauté 5 min and toss occasionally.
Add 1 cup chicken stock and juice of 1 lemon. Simmer and scrap up brown bits. Taste.
Add chicken back in without covering the skin. Simmer for 10 minutes or until internal temp of chicken reaches 165.
