Ranch Chicken and Ranch Dressing


Ranch Chicken:
4 moderate sized chicken breasts - about 4 to a pound. 
1 packet of ranch seasoning
salt, pepper, garlic, italian seasoning

Directions: Put seasoning and packet in a large bowl. Prepare cast iron pan with 2 TBSP olive oil. Toss the chicken breasts on both sides with the seasoning. You should have just enough. Then place the chicken breasts in the cast iron pan. Bake at 400 degrees for 20 min. Take out of the oven and let sit in the pan for 10 minutes. Perfectly cooked, juicy chicken for a salad. 

Dressing Ingredients:
1 cup mayo
1/2 cup milk
1/4 cup sour cream
1 tsp honey or agave
1 tsp mustard
1/2 tsp worcestershire
Ranch seasoning packet if you have it - otherwise see below:
1/2 tsp parsley
1/2 tsp dill
1/2 tsp chives
1 tsp onion powder
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
Mix and enjoy.  You will never but bottled ranch again!

For the perfect Ranch Chicken Bacon Salad: 
Ranch dressing
Ranch chicken
3/4 pound bacon, chopped
Shredded carrots
Chopped cucumber
Shredded american cheese
Diced tomatoes
Romaine lettuce
Homemade croutons (400 degrees for 11-13 minutes. Any bread tossed with olive oil, season salt, garlic, pepper)
