Triple Chocolate Chip Cookies
Ingredients:
8 oz semi sweet chocolate chips
4 oz dark chocolate with orange zest, broken into small pieces (I used Godiva brand)
1/4 cup cocoa powder
2 1/4 cups of flour
1 cup brown sugar
1/2 cup white sugar
1 tsp vanilla
1 TBSP baking soda
1 tsp salt
2 eggs
2 sticks of unsalted butter
Directions:
1. In a stand mixer, combine sugars and softened butter and mix until light and fluffy
2. Add in the 2 eggs and vanilla while mixer on low
3. Add in the flour, salt, baking soda, cocoa powder. Mix until just combined.
4. Add in the chocolate chips and dark chocolate pieces
5. Lay out a large piece of plastic wrap and remove cookie dough from bowl onto plastic wrap. Cover tightly and refrigerate for at least 1 hour, or up to 24 hours.
6. Preheat oven to 350. Prepare 2 baking sheets with parchment paper
7. Divide the batter into 12 cookies and place evenly apart on the tray.
8. Bake for 8 minutes, switch the trays around, bake for another 7-9 minutes. cookies are done when they have puffed up and the edges are looking baked through. The middle should be nice and soft.
9. Enjoy with a tall glass of milk or with vanilla ice cream.
