BBQ Roasted Cauliflower
Rub:
2 TBSP sugar
1 TBSP salt
1/2 TBSP chili powder
1/2 TBSP paprika
1/2 TBSP garlic
1/2 tsp onion powder
1/ tsp cayenne
1/2 tsp cumin
1 tsp black pepper
Sauce:
1/2 cup butter, melted
1/2 cup of your favorite bbq sauce. I used glory Days honey bbq here.
1 large head of cauliflower - green parts removed and any thick stem parts.
Directions:
1. Preheat oven to 400 and set the cauliflower in a cast iron pan.
2. Melt your butter and mix with bbq sauce.
3. Brush your cauliflower with 1/2 the mixture. Sprinkle generously with seasoning and brush all over to spread it out.
4. Place in the oven for 1 hour, basting about 3 times in between. Use all your butter mixture and even use a spoon to catch the butter on the bottom of the pan and drizzle back over the top of the cauliflower.
5. After an hour you should have a nice brown crust on the outside. Depending on your oven, you can sprinkle a little more seasoning. You should finish all of your sauce/butter mixture but likely will not finish your seasoning - save it for next time because this will be a repeat recipe for you!

If you're grilling this, place it on a 400 degree oven over indirect heat for 1 hour.
