Sweet Potato Goat Cheese Appetizer Rounds



Ingredients: 
2 medium sweet potatoes, peeled and cut into 1/2 inch slices
Olive oil
Salt
1 TBSP sugar
1/2 tsp cinnamon
4 oz goat cheese
1 TBSP heavy cream or half and half
1 TBSP honey

For garnish:
1/2 cup candied pecans
1/4 cup dried cranberries
honey for drizzling

Directions:
1. Preheat oven to 400 degrees.  Line a sheet pan with foil and spray with cooking spray
2. Combine the sugar, salt and cinnamon and set aside
3. Brush the rounds with olive oil and sprinkle with the salt/sugar mixture
4. Bake for a total of 30 minutes, flipping halfway through
5. While the sweet potatoes are baking, combine the goat cheese, cream and honey and whip together.
6. When the sweet potatoes are done, let cool a bit. Add a tsp of goat cheese on each round, top with pecans and cranberries and drizzle with honey. Serve
