DONUT PANCAKES

Yes, donut pancakes taste just like a glazed donut.  Maybe putting the flavors in pancakes don't make you feel as guilty about eating 6 of them???  This dish was inspired by Mary's Morning Mix Up in Brookfield, IL.  After much googling and experimenting, I put my own recipe together to try to match that wonderful taste of Mary's Donut pancakes.

Ingredients to make about 15-18 pancakes:
2 cups of "Super Moist" white cake mix
2 cups Aunt Jemima pancake mix
3 cups milk
1 tsp vanilla

Ingredients for glaze:
juice from one juicy lemon
3 TBSP milk
1 tsp vanilla
2-3 cups of powdered sugar
*Whisk together until a thick glaze forms. It should drip slowly off the whisk but not be too tight.

Butter your skillet over medium low heat. Slowly drop some pancake batter on the hot skillet. Wait 2-3 minutes until you see the pancake setting and bubbles starting to develop. Carefully flip. Cook another 1-3 minutes. Plate 3 pancakes on top of each other. Use a small biscuit cutter to cut a donut hole in the center of the pancakes. Drizzle with the donut glaze.  Serve.

Use the "donut holes" as a treat or a snack for the kids! Or plate them on the side as seen below.
