Hot Oil Pizza #2

Ingredients: 

2 thin crust Pillsbury pizza crust (in pop tube)

2 cans of pizza sauce

2 packages of sliced mozzarella cheese (about 1 pound total)

2 jalepeno peppers

1 package of spicy sausage slices, fried like bacon

1 can of pineapple chunks

6 oz shredded asiago

olive oil

italian seasoning

cooking spray

red pepper flakes

parmesan cheese for topping


Directions: 

1. Slice jalepenos in half and add to a small pot with about 1 cup of olive oil.  Heat over low heat for about 10 minutes, or longer for more intense flavor. 

2. Heat sauce with italian seasoning, salt, pepper, red pepper flakes over low heat.  Stir often and taste for seasoning. It should be good after about 10 minutes. 

3. Fry your spicy sausage slices and drain on paper towel-lined plate. 

4. Spray 2 sheet pans with cooking spray. Preheat oven to 400 degrees. 

5. Carefully spread pizza dough on sheet pan. Lift and pull, turn pan, lift and pull.  The dough should just come to the end and use your fingers to make just a slight litte crust but mostly flat.  Brush dough with the hot oil and then put in oven for 10 minutes. Halfway through rotate pans to switch position. 

6. Take dough out, brush again with oil and sprinkle with italian seasoning. Spread sauce on, lay mozzarella cheese, place sausage slices, place 1/2 jalepeno in the center and drizzle a little oil. Sprinkle with asiago. Place pizzas back in the oven for 10 minutes. 

7. Take pizzas out, check bottom to make sure it's getting brown. Add the pineapple. Rotate the pans and switch racks/top to bottom. Pizza now should just take another 2-3 minutes to finish the crust and get bubbly. You don't want to take out the pizza too soon because the center will be soggy. 

8. Let cool for 5 minutes. Cut into squares and top with red pepper flakes and parmesan, if desired.
