Summer Corn with Fresh Basil
Ingredients:
4 ears of fresh summer corn, cut off the cob into a bowl
About 5-7 leaves of fresh basil, sliced in this ribbons right before using (about 2 TBSP)
1 TBSP chopped parsley
1 tsp of minced garlic from the tube (or 2 cloves of garlic minced very well)
2 TBSP butter
2 tsp toasted sesame seeds
1-2 tsp of 5 pepper/5 salt mix
Directions:
1. In a medium cast iron skillet, that is heated over medium heat, add sesame seeds and toast for 1-2 minutes. Toss the around a few times. As soon as they get really fragrant and nutty, turn off the heat and take them out of the skillet in a small bowl.
2. To the skillet, add the garlic and the butter. Today once I got to this part I took my skillet outside on the grill because I already had the grill going for some chicken. Heat the skillet over medium heat with the butter and garlic.
3. Add the corn and the pepper/salt blend. Cook, stirring often for about 5 minutes. At the end, turn off the heat and add in the basil, parsley and sesame seeds and toss. Serve right away.
