Candied Yams

 

Ingredients:

4 Sweet potatoes

1/4 cup sugar

1/2 cup brown sugar

6 TBSP butter

1 tsp cinnamon

1/2 tsp ginger

1/2 tsp nutmeg

1/2 tsp salt

1 tsp vanilla

Directions: 

1. Peel the sweet potatoes and cut them in half lengthwise, then in half again lengthwise and then into 3 pieces each. 

2. Melt the sugar and butter together. Add seasonings then 1 tsp vanilla.

3. Line a pan with foil for easy clean up (or use a disposable). Toss sweet potatoes in the sugar/spice mixture then lay out on the pan in even layer. 

4. Bake. covered for 30 min at 375. 

5. Stir, bake uncovered for 30 minutes. Prick with a fork to see tenderness, they should be soft and break easily apart. Sugar should be caramelized.
