Grilled Bison Burgers

 Burger meat:

1 pound of ground bison

1/2 pound ground chuck

1/4 of an onion, minced (use a grater)

2 cloves of garlic, minced (use a grater)

Salt and pepper

Egg

Combine all ingredients with pitch fork hands being careful not to over mix and smash. Use a large biscuit cutter to form 4 patties. Tip: form patties on individual pieces of parchment paper so as to better pop them on the grill. Today I sprinkled my burgers with a little charred seasoning. Cook about 5 minutes per side. 

Garnish and buns:

Romaine

Tomato

Brioche buns

Butter

Havarti cheese

Spicy Mayo or your condiment of choice

What takes this over the top is buttering the brioche buns on both sides and roasting them slightly on the grill. Keep warm with foil. At the last minute of burger cooking place Havarti cheese on the burger.  Lower heat and close lid for a minute. Serve burger on bun topped with lettuce, tomato and spicy Mayo.
