Za’aatar Spiced Chicken Caesar Salad

 Ingredients and for dressing:

5 TBSP tahini paste

3 garlic cloves, minced

Juice of 1 and 1/2 lemons

2 TBSP Dijon

3 TBSP Mayo

3/4 cup grated Parmesan 

2 tsp pepper

Pinch of salt

2/3 cup olive oil

Whisk or shake and store in fridge until ready to use. 

Directions for croutons:

5-6 slices of day old bread or bread you froze and then thawed

Za’aatar

Salt

Pepper

Garlic

Parmesan

Olive oil

Toss. Bake 400 degrees, tossing once for a total of about 15 minutes or until golden brown and crispy. 

For the chicken:

Preheat your cast iron pan in the oven while the croutons are cooking. 

Season 4 thin cut chicken breasts with za’aatar, salt and pepper on both sides. 

Carefully rub or brush cast iron with a little oil. Bake chicken for 15 minutes. Remove from pan and let rest for a few minutes before cutting. 

To make salad - romaine and slices of Asiago cheese. Toss everything together and enjoy!
