Coffee-Rubbed BBQ Ribs

 



Ingredients: 
2 racks of baby back ribs
spicy mustard
Coffee rub
Wood chips
Some sweeter BBQ sauce or sauce of your choice. 

Directions: 

1. The day before cooking, remove the silver skin from the ribs. Rub both sides with a little spicy mustard - just enough to hold the rub on. 

2. Rub generously on both sides with coffee rub. Cover and refrigerate overnight. 

3. 2 hours before cooking, bring the ribs out of the fridge and allow to sit on the counter to room temp. 

4. Soak wood chips in water for at least 30 minutes. Make 2 wood chip packets with foil. Punch little holes all around so smoke can get out. 

5. Prepare a 4 burner gas grill with the two outer edge burners on medium high. Place one smoke pouch on either side. 

6. On the top shelf, in the middle, place a cup of water.

7. Bring the grill to 300 degrees. Place the ribs (keep the slabs full, don't cut) in the center. Cover and cook for 90 minutes. Halfway through you can check on them once and mop with some beer - optional.

8. After 90 minutes, brush the ribs with sauce. Wrap each in foil. Place ribs right back in the middle and cook another 90 minutes. 

9. After a total of 3 hours (1.5 unwrapped, 1.5 wrapped), unwrap the ribs. Mop or brush the ribs with beer or sauce again.  Place over low flame to pick up some additional color and caramelization - just about 10 minutes and watch them closely. 

10. Let rest for 10 minutes under foil and then cut and serve. The meat should fall off the bone here and be delicious.  If you can find a coffee BBQ sauce or espresso BBQ use it here.
