Grilled Blackened Salmon with grilled vegetables and a hot honey sauce


Ingredients for salmon: 

2 large salmon fillets, skin off (about 8 oz each)
Cajun seasoning
salt
canola oil

Ingredients for sauce (whisk and keep warm): 

4 TBSP melted butter
2 TBSP hot honey
1 TBSP dijon
1/2 lemon, juiced
salt

Ingredients for vegetables: 

Broccoli
Small red potatoes
canola oil
salt, pepper, garlic powder

Directions: 

1. Line a grill tray with foil and spray with cooking spray. Boil the potatoes just until tender and drain to cool. 

2. Toss the potatoes and broccoli with a little canola oil, salt, pepper, garlic powder. Place the foil lined tray over high heat and add vegetables to foil lined grill tray. 

3. Cook for 5 minutes. Heat up the other side of the grill with a non stick grill pan or oil your grates well.  

4. Brush the salmon with a little canola oil and season with cajun seasoning and salt. 

5. Once the vegetables have cooked for 5 minutes add the salmon on the other side.  Cook salmon over high heat for 5 minutes each side with the lid closed most of the time.  

6. Toss potatoes and broccoli once during cooking. 

7. Serve together with warm honey sauce.
