Burger on a Roll and Winter Oven Fries

Burger on a Roll
1 pound 85/15 ground beef
1.5 TBSP grated red onion
2 TBSP minced garlic
Salt and pepper
1 TBSP canola oil
1 TBSP smokehouse apple seasoning or some kind of BBQ seasoning
8 slices of White American Cheese
4 Soft Sandwich rolls
Directions: Mix all ingredients (except cheese and buns) in bowl just until combined. Use a large cookie cutter to shape 4 quarter pound patties. Let sit in the refrigerator for at least 10 minutes but up to 2 hours. Heat large pan with 1 TBSP canola oil to medium high heat. Cook the burgers for 5 minutes on the first side and then 3 minutes on the other. Reduce the heat at the third minute, add the cheese and cover to steam for 1-2 minutes or until cheese is nice and melty. Serve on the roll with BBQ Sauce on the side.

Winter Spice Fries:
4 TBSP Winter Canola oil (see recipe below)
3 medium russet potatoes cut into wedges
A mixture of seasonings to sprinkle on the fries: garlic powder, salt, pepper, thyme, allspice
Directions: Preheat oven to 400 degrees.  Cover a sheet tray with foil and spray with cooking spray. Cut potatoes in wedges (should be about 8-10 wedges per potato) and soak in ice cold water for at least 15 minutes.  This will draw out some of the starch and give a slight crisp to your fry. Dry potatoes. Put on sheet track and drizzle with canola oil and sprinkle seasoning. Toss around make sure they are all evenly seasoned.  Put in over for about 45-50 minutes, turning once.

Winter Canola oil:
Add the following ingredients to about 12-20 oz of canola oil and let sit overnight
4 cloves
4 sprigs of thyme
3 cloves of fresh garlic
1 nutmeg pod, cut into 4 pieces
1 bay leaf

Reserva
2010
Malbec
Mendoza, Argentina
You can smell the spice and nutmeg in this wine but wait till you taste it.
