Egg Nog Cookies

Egg Nog Cookies
Prep time: 30 minutes, cook time 12 minutes
Makes 15 medium-size cookies
Ingredients:
2 1/4 cups of all purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg (i also grated some fresh nutmeg for garnish)
3/4 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup dark brown sugar
2 large egg yolks
2 tsp vanilla extract
1 tsp of rum or brandy
1/2 cup egg nog
Frosting:
1/2 cup unsalted butter at room temperature
4 - 5 TBSP egg nog (you may use somewhere between 4-5 TBSP depending on the consistency of your frosting as you are whipping)
1 TSP Brandy or Rum
3 cups powdered sugar
1 tsp cinnamon
1/2 tsp nutmeg

Directions:
- Preheat oven to 350 degrees. In a mixing bowl, whisk together flour, baking powder, salt, nutmeg and cinnamon for 30 seconds, set aside. In another large bowl, use a hand mixer, whip together butter, granulated sugar and brown sugar until pale and fluffy. Mix in egg yolks one at a time, blending just until combined after each addition. Mix in vanilla extract, rum and egg nog. With mixer set on low speed, slowly add in dry ingredients and mix just until combined. Scoop dough out by the heaping tablespoonfuls and drop onto Silpat or parchment paper lined baking sheets, spacing cookies 2-inches apart. Bake in preheated oven 12 - 14 minutes. Allow to rest on baking sheet several minutes before transferring to a wire rack to cool. Cool completely then frost with Eggnog Frosting and sprinkle tops lightly with decoration.
- For frosting, cream the butter until pale yellow color and smooth. Add the egg nog, liquor and seasoning and mix again. Lastly, one cup at a time add the powdered sugar. You may need a little more powdered sugar or a little more egg nog depending on the thickness of the icing and your preference.
- The decoration I used was a mix of brown sugar, cinnamon, fresh grated nutmeg and a little red decorating sugar.
