Chicken Alfredo
Ingredients:
3 chicken breasts
1 box of angel hair pasta
4 TBSP butter
1/4 cup of chopped parsley
3/4 cup grated parmesan cheese
3/4 cup shredded mozzarella
1 TBSP canola oil
3 TBSP olive oil
3 garlic cloves, minced
2 cups heavy cream
Pinch of cayenne pepper and paprika for the sauce
1 tsp of each of the following to season the chicken with: garlic powder, onion powder, paprika, pepper, salt
Directions:
1. Boil water and cook pasta according to directions
2. Season chicken on both sides and heat canola oil in pan. Cook chicken over medium heat for about 5-7 minutes each side. This should create a nice color for you. Reserve the chicken and let rest for a bit before slicing
3. Start your sauce, In the pan that you cooked the chicken in, just drain the grease and lightly wipe out with a paper towel. Add your butter, olive oil and garlic to the pan. Melt.
4. Whisk in the cream and bring to a simmer for 10 minutes, stirring often. Once it is reduced a little, whisk in the parmesan cheese. Taste for seasoning. Here I added a little salt and pepper as well as a pinch of cayenne pepper and paprika.
5. Once it is a nice consistency, whisk in your mozzarella cheese.
6. Taste again for seasoning. If your sauce is too tight, stir in a little more olive oil or cream.
For best results serve right away. Plate the angel hair, then top with sauce and the chicken and fresh parsley.
