Vietnamese Spicy Pork and Kale Soup


Ingredients:
2 cloves of garlic, minced
2 tsp of ginger, minced
6 large kale leaves, stems removed and chopped
1 red onion, sliced thin
1 thai chili pepper, with just a sliver in it so it can infuse flavor in the soup
10 oz. ground pork
8 oz. Udon noodles
2 TBSP PHO stock concentrate
2 TBSP soy sauce
1 tsp canola oil

Directions:
1. Heat the oil in a large pot. Add onions until softened - about 3 minutes. Season with salt and pepper. Add ginger, garlic and thai chili.  Cook for another minute or so.
2. Add in the pork and more salt and pepper. Break up the meat and brown.
3. While the meat is cooking, cook the noodles in boiling water in another pot for about 4-5 minutes.
4. To the soup pot, add 2 cups of beef stock, 3 cups of water, the Pho concentrate, soy sauce and kale.
5. Simmer for at least 10 minutes. Serve and enjoy.
