Low and Slow BBQ Ribs
2 racks of baby back ribs, silver skin removed.
4-6 TBSP of my BBQ rub (see previous post)
4 TBSP of your favorite bbq sauce
2 cups of wood chips, soaked in water for at least 30 minutes and then drained and wrapped in foil. Poke a few holes in the foil packet.
1 dark beer, plus 1 cup of water, plus 1 TBSP sauce
Preheat your grill to 275. Left burner on high, middle burner on medium and right burner off.
Place woodchips over burner (under grate) on the left side. Place cup of beer with water and 1 TBSP bbq sauce over middle burner. Please ribs, cut into 4 half racks on the right side.

Maintain your grill temp at 225.
Close lid and cook for 1 hour. Brush with liquid and turn over. Cook for 1 hour. Turn middle burner to low and right burner to low heat. Now every 20 minutes you are checking on them and turning them, brushing them with liquid. You should be getting some nice smoke out of the woodchip packet now and nice coloration on the ribs. After a total of 3 hours, your ribs should register 190 degrees. Pull them off, let them rest under foil for 5-10 minutes and then cut into individual ribs. Enjoy with your favorite sauce over the top or plain!
