Parmesan-crusted chicken thighs with vegetable rice pilaf
Chicken Ingredients:
6 chicken thighs
Lawrys season salt
pepper
itlalian seasoning
Olive oil
1/2 cup chicken stock
2 tsp minced garlic
Directions:
Season chicken with salt and pepper. Heat a few TBSP olive oil in a large pan that can go in the oven. Sear the chicken for 4 minutes each side. Add the chicken stock, 2 tsp minced garlic, italian seasoning. Move the chicken around and deglaze the pan a bit. Put into a 350 degree oven for 15 minutes Sprinkle generously with parmesan and put under the broiler for 5 minutes. Enjoy.
Vegetable pilaf
1 cup wild rice
1.5 cups chicken stock
1 bag of mixed vegetable (peas, carrots, corn). I steamed them in the bag in the microwave
2 TBSP butter
salt
italian seasoning
Directions:
Cook rice in chicken stock with salt an 1 TBSP butter. (This rice cooked for 15 minutes). When rice is done, toss in the remaining butter, the cooked vegetables and italian seasoning. Taste for seasoning. Serve alongside chicken.
