Watermelon Arugula Salad


Ingredients:
1/4 of a watermelon, cubed (about 4 cups of cubed watermelon)
1 container of arugula salad - about 6 oz
2 handfuls of mint leaves
1 (6oz) container of crumbled feta
Fresh cracked black pepper for garnish
Balsamic vinaigrette:
3 TBSP balsamic
3 TBSP olive oil
1 garlic clove, minced
1 tsp dijon mustard
1 tsp sugar
salt and pepper

Directions: 
Toss arugula and mint gently with the balsamic. Plate and then top with watermelon, feta and fresh cracked pepper. Serve along side a nice steak!
