Shortcut Jerk Chicken Wings
Use 1/2 jar of spicy jerk marinade
Add 2 TBSP of canola oil
smoked paprika
Suggested side would be red beans and rice or a sweet grilled plantain.
Add 2 TBSP of canola oil
smoked paprika
salt
pepper
ground thyme
cayenne
About 25-30 chicken wing dings
Brushing sauce:
2 TBSP spicy jerk marinade
juice of 1 lime
2 TBSP butter
Warm it up to melt the butter and combine. Reserve.
Optional garnish: Zest of 1 lime and diced green onions (green parts only)
Directions:
1. In a large bowl, sprinkle chicken generously with salt, pepper, smoked paprika and thyme. Sprinkle a little cayene and drizzle with oil. Toss.
2. Add in your jerk marinade from the jar, toss. Refrigerate for 8-10 hours.
3. Take the chicken out 30 minutes prior to grilling. Grease the grates.
4. Place chicken over direct low/medium heat. Leave alone for at least 5 minutes and nudge a little to see if they are ready to flip. Flip and cook another 5 minutes. Now both sides should have nice colored skin that is sealed and won't tear on the grill. Now you can flip often and move around to avoid flare ups. Cook about 30 minutes.
5. At 30 minutes, brush one side with reserved brushing sauce mixture. Cook another 5 minutes then serve.
6. Garnish with reserved lime zest and green parts of green onion. These don't need a sauce!
Suggested side would be red beans and rice or a sweet grilled plantain.
