Valentine's Day Surf and Turf

Filet Mignon: 

4 (5oz) filet mignons

Garlic, himalyan salt, pepper blend

Butter

Garlic herb butter: tarragon, garlic, parsley, thyme, sage

Heat a large cast iron pan over high heat until smoky. Add 2 TBSP butter. 

Dry steaks and season. Preheat oven to 375. 

Sear steak on one side for 5 minutes. 

Flip. Immediately add a pad of garlic herb butter on top each one. Add a sprig of thyme and tarragon to the pan. Place in the oven for 8 minutes or until 140 degrees internal temp. 

Remove from oven and cast iron pan. Cover with foil and let rest for at least 5 minutes. 

Lobster Tail:

4 small lobster tails, cut in half and rinsed. 

Season with same seasoning as above. 

In a different non stick pan, heat 2 TBSP  butter to medium heat. Sear lobster open side down for about 4 minutes. Turn over for 2 minutes.  In the final 2 minutes add a few more pads of butter and begin tipping the pan and basting the lobster tail with butter using a spoon.
