Cauliflower Gnocchi with Chicken Sausage and Lemon Butter Sauce
Simple and healthy dinner for two.
For Sauce:
Over low/medium heat, add 1 tbsp butter and 2 tbsp shallot and 2 tbsp garlic salt and pepper
Melt for about 5 min on low medium
Deglaze with 1/2 cup Chardonnay
Add 2 tbsp butter and whisk.
Add some lemon juice and whisk
Add 2 tbsp butter and whisk.
Add chopped thyme, parsley, tarragon and sage. (About 2tbsp all together.)
Cover and keep warm while you make the gnocchi.
In a non stick pan sear your sausage. I used roasted garlic and gruyere sausage today cut into rounds. Sear with 1 TBSP butter on both sides. Deglaze with 1/2 cup water while sausage is still in pan. Then remove liquid and sausage to a bowl.
To that same pan, add 2 TBSP butter then 2 bags of Trader Joe's Cauliflower Gnocchi. Season with salt and pepper. Sear untouched for about 4-5 minutes. Then try to quickly turn each gnocchi to sear another side. Add a little more butter if sticking a bit. Cook for another 3-5 minutes or until soft.
Add the sausage back to the pan and add 2 handfuls of fresh chopped spinach. Salt and pepper.
*Turn your heat on low on your sauce and stir. Warm that a bit while spinach is wilting.
Once spinach is wilted, divide sausage, gnocchi, spinach mixture among two plates and then drizzle with the lemon butter sauce.
