Grilled Mango Habanero Wings
Ingredients:
Salt, Pepper, Garlic Powder
1-2 TBSP canola oil
3 TBSP butter
3 TBSP Dirty Dick Hot Sauce with a Tropical Twist (you can buy it on Amazon)
6 TBSP Mango Chutney (mild)
Optional: green onion for garnish
Directions:
1. 2-6 hours before grilling, put wings in a large bowl, toss with oil, and a good amount of salt, pepper and garlic powder. Toss well and refrigerate until ready to grill.
2. Combine the sauce ingredients (butter, chutney and hot sauce) over low heat, stir and reserve. Keep it warm but don't cook it the whole time the wings are on.
3. Preheat the grill to high. Add the wings and cook, untouched for 10 minutes. Try to keep the lid closed only checking if you sense a big flare up. Flip the wings and rotate them around (if you have hot spots on your grill). Cook for another 12-15 minutes or until internal temperature reaches 170. Remove from grill.
4. In a large metal bowl, add a few TBSP of sauce, add about 10 wings and toss them in the sauce. Plate and garnish with green onion. Keep the remaining sauce and wings warm but don't completely cover and seal the wings. You want them to breath so they stay crispy.
