Mediterranean Style Sausage and Peppers with Broccolini
Ingredients:
1 package of hot italian sausage
2 bunches of broccolini
1 pound of fresh mozzarella, sliced works great
1 jar of cherry peppers
1 red pepper
1/4 cup olive oil
salt, pepper, garlic powder
Directions:
1. Preheat oven to 400 degrees. Line a sheet pan with foil and spray with cooking spray. Place the sausages on the tray and cook for about 20 minutes, flipped halfway.
2. While the sausage is cooking, chop off the 1 inch of dry end on the broccolini. Cut your red pepper in slices and cut your cherry peppers in half.
3. Remove sausage from oven, let cool for 5 minutes. Change the foil on the tray to prevent a smoke out! Cut the sausages in half length wise and place back on the tray.
4. Toss the broccolini and red pepper with olive oil, salt, pepper, garlic. Place on top of the sausage. Return to the oven for 10 minutes. Remove from the oven.
5. Switch your oven to broil. Place the sliced mozzarella on top of the broccolini. I used all of it. Return to the oven for 3-5 minutes watching carefully so it doesn't burn.
6. Remove from the oven, top with cherry peppers and drizzle with olive oil.
This is a great weeknight meal and very nutritious.
