Acorn Squash Arugula Salad
Ingredients:
1 acorn squash
Olive oil
salt and pepper
dried cranberries
goat cheese
candied nuts
Dressing:
2 TBSP orange juice (lemon juice works too)
2 tsp dijon mustard
2 tsp red wine vinegar
2 tsp honey
2 TBSP olive oil
salt
pepper
Directions:
All you have to do here is cook the acorn squash and then assemble the salad. To do that, slice the acorn squash like an apple. Toss in olive oil, salt and pepper. Put slices on hot grill for about 2 minutes per side on direct heat. Then I moved them up to the top rack and cooked them for another 10 minutes or so with the lid closed until tender.
