Green Curry Chicken Wings
Ingredients:
2 packages of wingettes or wing dings - about 30 wings
2 tbsp. Baking Powder
Thai Spice Rub-
2 Tbsp Curry Powder
1 tsp Coriander
2 tsp Cumin
1 tbsp Dried Basil (or italian seasoning is fine)
2 tsp. Garlic Powder
2 tsp Onion Powder
2 tsp Salt
2 tsp Black Pepper
2 green onions, diced
For Sauce:
2 TBSP green curry paste
3/4 can coconut milk
tsp honey
1/2 tsp minced fresh ginger or you can use dried ginger powder
Taste for seasoning as all curry pastes are different. Add chili paste or chili powder if you want it hotter. Add a little more honey if you want to calm down the heat.
Directions:
Oil the grill grates. Cook the chicken wings for 40 minutes on the grill. For the first 6-8 minutes don't move the chicken. You want color on the skin and to seal the flavor in. If you move it too soon and the skin breaks you let all the juices out. Continue turning often for about 40 minutes. When chicken is done, toss in a bowl with sauce and serve garnished with diced green onions (optional).
