Grilled Cajun Shrimp and Sausage Skewers over vegetable rice



Ingredients for skewers: 

Smoked andouille or smoked polska sausge, cut into 1 inch slices
1 pound xl raw shrimp, peeled and deveined
canola oil
Joe's Stuff
Chipotle powder
Season salt

Ingredients for rice: 
2 tsp minced garlic
a few dashes of worcestershire
salt
TBSP olive oil
Stock instead of water to cook rice
1/2 bag small mixed vegetables (frozen)

Directions: 
Toss sausage and shrimp in oil and seasonings. Alternate shrimp and sausage on the skewer. Grill over high heat for about 4 minutes per side or until shrimp is opaque.  
For the rice, follow package directions for rice to water/stock ratio. I used 1 1/2 cups of rice for mine. Add the other ingredients into the pot and cook according to directions. While the rice is cooking, microwave the vegetables just to defrost and warm them. When rice is done, fluff with a fork and then toss in the vegetables. Taste for seasoning. 
Serve rice on the bottom and then 2-3 skewers on top.
