Chicken Huli Huli Kabob

 Ingredients: 

1 pineapple, outer shell removed and cut into cubes

2 packages of boneless skinless chicken thighs

Mexican Blast seasoning mix

sweet paprika

salt

pepper

Huli Huli sauce (you can buy it or find your fav mixture online)

Directions: 

Cut chicken into large pieces. Soak skewers in water for 30 minutes before using. Toss chicken in seasonings generously. 

Start your skewer with a piece of pineapple, then 2 pieces of chicken, and alternate. End with pineapple. 

Preheat grill to medium heat and oil the grates. Grill kabobs for about 10 minutes. Now start brushing  your kabobs with huli huli sauce every 5 minutes and turning. Make sure sauce is not burning, you can turn down heat if you need to. Chicken usually take 30 minutes and you should have some nice color from the sauce caramelizing.
